Energy supply

Vitamins do not provide energy. They are chemical compounds that help in the functioning of other nutrients.

Origin

The body is not able to produce vitamins; we get them from the nutrients in our food. Although we need them in very small amounts, they are essential to the proper functioning of the body.

Role

Vitamins regulate chemical reactions in the body.

Types

Water soluble vitamins are not stored in the body, and so they (C and B complex vitamins) need to be replenished regularly.

Fat-soluble vitamins are stored in our body with the help of fat (A, D, E, K vitamins).

Storage

Water soluble vitamins cannot be stored, so excess intake is not harmful or toxic.

Fat-soluble vitamins are stored in the liver and fatty tissue. They are only able to leave the body very slowly; consequently, an overdose of these vitamins can be toxic.

Most vitamins are available from fruits and vegetables.

Important note:

The majority of vitamins are sensitive to high temperatures, so do not overcook your food. Try steaming produce because it softens the cell wall and vitamins are released more easily.
